The ServSafe Manager book runs hundreds of pages, but the exam draws heavily on a much smaller set of high-yield facts asked in different ways. Here's what actually matters for the 9th Edition exam, the specific numbers worth memorising, and how to study them so they're still there on exam day.

The Topics That Carry the Most Weight

Time and Temperature Control — the single densest topic on the exam. Expect it tested from several angles, not just "what's the number." The minimum internal cooking temperatures are the core: poultry, stuffing and stuffed meats at 165°F (74°C) for under a second; ground meat, injected or tenderized meat and ground seafood at 155°F (68°C) for 17 seconds; seafood, steaks and chops, and eggs for immediate service at 145°F (63°C) for 15 seconds; roasts at 145°F (63°C) held for 4 minutes; and fruits, vegetables, grains and legumes that will be hot-held at 135°F (57°C). Microwaved raw animal food goes to 165°F, stirred and covered, then stands 2 minutes.

Around those sit the holding rules. Hot holding is 135°F (57°C) or higher, cold holding is 41°F (5°C) or lower, and the temperature danger zone between them is 41–135°F, with 70–125°F the range where growth is fastest. Reheating for hot holding means 165°F (74°C) for 15 seconds, reached within 2 hours.

Cooling is where marks get lost, because it has two stages: 135°F down to 70°F within 2 hours, then 70°F down to 41°F within 4 more — 6 hours total. If the first stage takes longer than 2 hours you have already failed it, whatever the total. Where time is used as the control instead of temperature, cold TCS food gets 6 hours maximum and must never go above 70°F; hot TCS food gets 4 hours and is then discarded.

FAT TOM and the Big 6 — FAT TOM is the six conditions that let pathogens grow: Food, Acidity, Temperature, Time, Oxygen, Moisture. The Big 6 are the illnesses singled out for special reporting: Norovirus, Hepatitis A, Salmonella Typhi, nontyphoidal Salmonella, Shigella spp., and Shiga toxin-producing E. coli (STEC). The rule attached to them is the testable part — a food handler diagnosed with any of the Big 6 must be excluded from the operation and reported to the regulatory authority. Jaundice, and vomiting or diarrhoea, are the other exclusion triggers. Both are mnemonic-friendly and both come up repeatedly.

Cross-Contamination and Personal Hygiene — handwashing for the exam is 100°F water for about 20 seconds (the FDA Food Code 2022 states 85°F; the ServSafe exam value is the one to answer with). Gloves get changed and hands washed between tasks, whenever you move from raw to ready-to-eat, and at least every 4 hours. Cleaning and sanitizing is an order-of-operations question: clean first, because sanitizer only works on a clean surface. Chlorine runs 50–99 ppm for at least 7 seconds; quat is per label, roughly 150–400 ppm for at least 30 seconds; iodine is 12.5–25 ppm at pH 5 or below for 30 seconds; hot-water immersion is 171°F (77°C) for 30 seconds. A three-compartment sink is wash, rinse, sanitize, air-dry, with wash water at 110°F (43°C) or above.

Allergens — the Big 9 major allergens are milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame; sesame was added as the ninth in 2023. The concept tested is cross-contact: an allergen transferring into an allergen-free food. The trap is that cooking does not eliminate an allergen, so shared fryer oil, shared equipment and unwashed hands all transfer it. Prevention is clean and sanitize tools and surfaces, wash hands, change gloves, and use separate equipment. Staff must be able to describe dishes and identify allergen ingredients.

Purchasing, Receiving, and Facilities — lower density than the above, but still tested. Cold TCS food is received at 41°F (5°C) or lower, hot TCS at 135°F (57°C) or higher. Shell eggs and live shellfish arrive at a 45°F (7°C) air temperature. Milk can arrive at 45°F but must be cooled to 41°F within 4 hours. Ready-to-eat TCS food that's date-marked is discarded after 7 days at 41°F, counting the prep day as day 1.

The Pathogens Worth Knowing by Name

Beyond the Big 6 reporting rule, a handful of pathogens are worth knowing by source and control, because that's how the exam frames them.

Why Re-Reading the Book Isn't Enough

The exam doesn't ask you to recognize a fact when it's in front of you — it asks you to produce the right answer cold, often phrased differently than the textbook. That's a different mental skill than reading, and it's why people who've "read the whole book" still miss questions on material they technically covered.

Look at the lists above and notice how much of it is a number. Numbers are exactly what recognition-reading is worst at: 155°F and 165°F look equally familiar on the page, and familiarity feels like knowledge right up until you have to produce one of them under a clock. The fix is testing yourself on the material, not re-reading it: pull the fact from memory, check it, repeat on the ones you missed.

A Simple Structure That Works

  1. Start with temps and times — they're the highest-density topic and the most mnemonic-friendly, so early wins here build momentum.
  2. Layer in FAT TOM, the Big 6, and cross-contamination once temps feel solid.
  3. Add the pathogen sources and controls, then allergens and the Big 9.
  4. Do a mixed review pass across everything, weighted toward whatever you keep getting wrong.
  5. In the final days, drill only your weak spots — not a full re-read.

Test yourself, drill the misses, and stop when the numbers come back automatically instead of "nearly."
Do I need the ServSafe book to pass?
