These values follow the ServSafe Manager 9th Edition and the FDA Food Code 2022. Where your local health code differs, the local code governs your operation — but for the exam, answer with the ServSafe values below.

Microwaved raw animal food is its own rule: cook to 165°F, covered, stirred midway, then let it stand 2 minutes before checking the temperature.

The 10-Degree Ladder

Notice the pattern: 165 → 155 → 145 → 135, in steps of ten. The ladder runs from the highest-risk food down: poultry at the top, then ground products (grinding spreads surface pathogens through the interior), then whole-muscle cuts and seafood, then produce headed for hot holding. If you can rebuild the why, you can rebuild the number.

Holding Temperatures and the Danger Zone

The danger zone isn't a separate fact to memorize — it's just the gap between the two holding rules. Learn cold ≤41 and hot ≥135 and the zone writes itself.

Cooling and Reheating

Cooling is the most-missed temperature question on the exam because it has two stages, and the first stage has its own clock:

  1. Stage one: 135°F down to 70°F within 2 hours.
  2. Stage two: 70°F down to 41°F or lower within 4 more hours — 6 hours total.

If food doesn't hit 70°F inside the first 2 hours, it has already failed the cooling standard, no matter what the 6-hour total looks like. Reheat it to 165°F or throw it out — and either way, the clock does not restart casually: exam answers that let you "just keep cooling" past a blown first stage are traps.

Reheating for hot holding is its own number: 165°F (74°C) for 15 seconds, reached within 2 hours.

Time as the Control Instead of Temperature

When an operation uses time alone (time as a public health control), the limits are:
